ON JANUARY 19, WE TOOK 40 GUESTS TO A SECRET LOCATION FOR AN IMMERSIVE DINING EXPERIENCE THAT CELEBRATED ALL THINGS THE NSW SOUTH COAST; FROM THE PEOPLE, TO THE PRODUCE.

Chef's Lachlan Grahame (Little Betty's) and Darren Formosa (ex- Hilton, The Imperial) assembled a gorgeous summer feast featuring produce from Appellation Oysters, Mountainside Farms and Martins Ridge Farms.
We lined up an excellent suite of wines (duh 💁♀️), that perfectly encapsulated the magic of Australian viticulture and were a knockout complement the gorgeous summer fare... we threw in a few favs from France because we simply loved them and couldn't refuse.

We partnered with the beautiful team at South Coast Style Magazine (Nick and Holly), working together on all aspects of the event, from venue, to menu.
We could absolutely not have pulled this off without help and generosity from amazing vendors including; Old Salt Distillery, Linnaeus Collections and Innovisuals.
sgroppino hour
40ml Old Salt Distillery Limoncello
20ml your favorite gin or vodka
20ml fresh lemon juice
30ml basil infused syrup (see note)
Dash of Prosecco or dry sparkling wine
Shake all ingredients except for Prosecco in a cocktail tin. Pour over ice and top with a dash of Prosecco!
(note: simmer 1:1 water, sugar with a bunch of fresh basil until sugar has dissolved - careful not to boil!)
